Agreed, it’s great that session doesn’t require a phone number. But what channel do you use to share session IDs? I only use session to talk to people I can validate their identity face to face. You risk a MITM attack if you share the ID over an insecure channel.

You can’t do face detection or other features with E2EE. It’s a design choice, and I think Immich fills a great spot as a google photo replacement, leave E2EE to other tools

Kubernetes is probably overkill, docker compose will work fine for most home labs. But I agree with your point, declarative infrastructure makes life so much easier, even for home labs.
