This actually fits why Arabs (who pronounce the sound 'P' as 'F') called the language Farsi and the province as the Fars province. This could imply the region was known as Pars and the people and language as Parsi.

A line of inquiry that needs to be resolved is why did the Parsi people not introduce themselves as Irani when they fled to Sanjan (present day Gujarat)?

An interesting point of historical observation is that the second wave of Zoroastrians who fled Iran to Bombay Presidency, (present day Maharashtra), referred to themselves as Irani and not Parsi.
